Itโs been years since Iโve had my favorite Vietnamese dish, pho ap chao!
No, itโs not pho the soup. I donโt really like pho ๐
This is a noodle dish where the noodles are fried in a sheet and then tossed in sauce, so you get an amazing half crispy, half chewy, delicious and unique meal.
First I had to remember what it was called, and then
and I went on the hunt to find a restaurant serving it here in northern Virginia. There are tons of Vietnamese restaurants here, so youโd think it would be easier ๐
At long last we found Rice Paper in Eden Center, and I finally got around to actually eating there today.
The flavor was spot on, but the texture was a little off from what I remember because the cakes of fried noodles were made about three times as thick and four times as large as Iโve had before. They also used round vermicelli-like noodles instead of flat.
I guess Iโll have to keep looking, or just order the dish again from Doanโs in Charlotte!
Anyone who knows another place to get this dish in NOVA, let me know ๐
Fun and weird note, for some reason my chopsticks today were labeled in Russian ๐ ๐คท๐ปโโ๏ธ
