The fruits of my attempt to make rice wine: some super thick but pretty tasty rice wine and the Chinese dish I made with it!
I used the following recipe with a few tweaks:
Replaced all rice wine called for with my homemade supa thicc unfiltered rice wine
Used a pound of boneless skinless chicken thighs
The jujubes I used were not the normal kind that are whole and simply dried, but dehydrated slices
Added a few shiitakes with the ginger
Instead of frying ginger in sesame oil, fried it in the grease from ginger scallion sausages and added the sesame oil at the end instead (I find heat destroys the flavor)
Considering my homemade wine was unsalted, the recipe still called for much too little salt.

I had this planned for over a week, but coincidentally woke up with a cold today, so perfect timing for a cozy, gingery meal!
Captivated by how pretty and wintry the ingredients look together before cooking ๐ looks pretty good after cooking, too. I love how the chicken is so tender you can pull it apart with chopsticks ๐คค
Now I know angelica root has an amazing smellโฆ I was curious how this dish was going to work with no alliums in it, but it works. I think the angelica root is kind of like truffle in the way that it has a slightly allium-like richness without really being the same flavor. If you donโt eat garlic or onion, this might be a fish or ingredient to try.
Iโm probably making this again sometime and maybe try cooking other Chinese dishes.
